Here’s how to make it

 

  • Wash & soak the brown rice for minimum 1 hour.You can soak it over night too.Soaking helps the outer bran of brown rice softer and enhances quick cooking.Chop the vegetables and keep aside.
  • Grind the ingredients given under “ To grind” to a smooth paste.Set aside.
  • In a pressure cooker base,heat oil+ghee and saute the whole spices,g&g paste,sliced onions.Mix well till raw smell goes off.Now add the tomato and saute till mushy.Add turmeric powder,red chilli powder & garam masala powder along with ground paste.Mix well and saute for a minute.
  • Lastly add 3 cups of water and soaked rice. Drizzle few drops of lemon juice and pressure cook in low flame for one whistle.It takes 10-15 minutes.
  • Open the cooker after the steam is released.Fluff the rice and enjoy with raita ! Rice looks mushy when it is hot but it will separate as it turns warm.

Fried Rice – Made with Brown Rice

Here’s how to make it

 

  • To start, heat a wok (or large chefs pan) on medium-high heat. Once hot, add a tablespoons of light oil and swirl it to coat the bottom of the pan. Next add in the 1/2 cup chopped onion, 1 cup carrot and pea medley.
  • Then add the frozen pea and carrot mixture. This will save you SO much time! You don’t even need to thaw it first.
  • Then, once the onions are soft, add in 1 clove garlic and cook 1 minute. Push the vegetables to the outside of the pan. Next, crack an egg in the center and use a spoon to quickly scramble.
  • Now I just add in 3 cups leftover, precooked brown rice, 3 tablespoons of low-sodium tamari and stir to heat through. I always taste and a little kosher salt here. However, feel free to add more tamari (or low-sodium soy sauce) to taste.
  • To make spice this up, add a few squeezes of hot sauce.

Brown Rice Salad

Here’s how to make it

 

  • Ingredients

 

3 cups brown rice cooked | 6 spring onions sliced |1 red capsicum finely diced | 1/2 cup Steamed sweet corns | 2 tbs sunflower seeds 2 tbs vinegar | 1/4 cup sunflower oil | 4 tbs soy sauce | 2 tbs lemon juice fresh |1 garlic clove crushed

 

  1. Place the rice, sliced spring onions, diced capsicum, corns and seeds In a large salad bowl, then toss to mix.
  2. In a screw-top jar, add the sunflower oil, soy sauce, lemon juice and garlic
  3. Shake well to mix and then pour over the salad, stirring to coat all ingredients.
